Directions
Get a head start by draining your ricotta in a mesh strainer over a bowl in the fridge for 8 hours or overnight for the perfect creamy texture.
Preheat your oven to 450°F (230°C) so it’s nice and hot when you’re ready to bake.
Generously season your chicken breasts with salt, pepper, and a pinch of cayenne for a lovely hint of heat.
Heat 2 tablespoons of oil in a pan over medium-high heat and sear the chicken until beautifully browned and just cooked through, about 6 minutes per side.
Turn off the heat and add a splash of cold water, stirring well to scrape up all those delicious, flavorful browned bits from the bottom of the pan.
Move the chicken and its savory juices to a bowl to cool for 5 minutes, then simply dice or shred the meat into bite-sized pieces.
In a large bowl, stir together your drained ricotta, salt, pepper, and the mozzarella, Monterey Jack, and Parmigiano-Reggiano cheeses until well blended.
Gently fold in the shredded chicken, the flavorful pan drippings, and your favorite marinara sauce using a fork until just combined.
Toss the bread crumbs with the remaining olive oil in your chicken bowl until they are lightly coated and ready to get perfectly crispy.
Spread the chicken mixture into a baking dish and finish it off with the oiled bread crumbs and an extra sprinkle of Parmesan, mozzarella, and Monterey Jack.
Bake in the center of your oven for about 20 minutes until the cheese is irresistibly bubbly and the top is a beautiful golden brown.
Let the dip rest for 10 minutes to allow the flavors to meld, then garnish with fresh parsley and serve with a spoon or spreading knife for everyone to enjoy!
