Ingredients
Ingredients
- 8 (5 ounce) bone-in, skin-on chicken thighs
- salt to taste
- olive oil
- 2 medium yellow onions, diced
- garlic, minced
- tomato paste
- all-purpose flour
- kosher salt, or to taste
- freshly ground black pepper
- smoked paprika
- sweet Hungarian paprika
- 1 pinch cayenne pepper
- chicken broth
- sour cream, room temperature
- heavy whipping cream
Directions
Generously season your chicken with salt on both sides, then heat olive oil in a deep, heavy pan over high heat. Sear the chicken skin-side down for about 5 minutes until it's beautifully browned and crispy; flip it over for another 3 to 4 minutes to color the other side, then transfer the chicken to a plate and set it aside (feel free to spoon out any excess fat if you like).
Using the same pan to capture all that flavor, sauté the onions with a pinch of salt over medium heat for about 5 minutes until they are soft and golden. Stir in the garlic, tomato paste, and flour for 3 to 4 minutes to create a rich tomato base, then add your salt, pepper, paprikas, and cayenne, letting the spices toast for one minute before pouring in the chicken broth and bringing it to a boil.
Lower the heat to medium-low and nestle the chicken and its juices back into the pan, spooning some sauce over the top. Cover with a lid and let it simmer gently for 45 to 60 minutes—basting occasionally—until the chicken is wonderfully fork-tender and cooked through, then move the chicken to a clean plate once more.
If you prefer a leaner sauce, skim off any excess fat from the surface, then whisk in the heavy cream and sour cream until the sauce is smooth and vibrant. Return the chicken to the pan and simmer uncovered for about 10 minutes, basting often until the sauce is rich and the chicken is heated through; give it a final taste to adjust the seasoning and get ready to enjoy a spectacular meal!
