Sweet and Sour Chicken

Ingredients: 500 g (1 lb) chicken breast or thighs, cut into bite-sized pieces 2 tbsp soy sauce 2 tbsp cornstarch 1 red bell pepper, diced 1 green bell pepper, diced 1 onion, chopped 2 cloves garlic, minced 2 tbsp vegetable oil For the sauce: 4 tbsp ketchup 3 tbsp rice vinegar (or white vinegar) 3 tbsp soy sauce 3 tbsp brown sugar 150 ml (2/3 cup) pineapple juice 1 tbsp cornstarch mixed with 2 tbsp water Instructions: Marinate the chicken pieces in soy sauce and 2 tbsp cornstarch for 15 minutes. Heat oil in a large skillet or wok. Fry the chicken until golden and cooked through. Remove and set aside. In the same skillet, sauté onion, garlic, and bell peppers until slightly softened. In a bowl, mix together ketchup, vinegar, soy sauce, sugar, and pineapple juice. Pour into the skillet. Bring to a simmer, then add the cornstarch slurry. Stir until the sauce thickens. Return the chicken to the skillet and toss to coat evenly in the sauce. Serve hot with steamed rice. Enjoy your delicious homemade Sweet and Sour Chicken!
