While Georgia is home to many styles of molten, cheese-stuffed bread, the stunning "bread boat" from the coastal Adjara region is easily the most beloved! This eye-catching, open-faced loaf features a gooey cheese center topped with a fresh egg yolk and a pat of butter. It’s a total joy to serve, as you get to stir everything together at the table for the most comforting, decadent treat imaginable!

Ingredients

Ingredients

  • 1 ¾ cups/225 grams all-purpose or bread flour
  • ¾ teaspoon granulated sugar
  • ¾ teaspoon active dry yeast
  • ¾ teaspoon kosher salt
  • olive oil
  • store-bought pizza dough, or homemade pizza dough completed through Step 2
  • 1 cup/100 grams shredded whole milk, low-moisture mozzarella (not fresh mozzarella)
  • ⅓ cup/40 grams goat cheese, finely crumbled
  • ⅓ cup/40 grams drained, finely crumbled brined feta (not low-fat or light)
  • unsalted butter, melted, plus 2 tablespoons cold butter for serving (optional)
  • 1 egg yolk from 1 large egg (optional)

Directions

  1. To make your own dough, gently warm the water to 105–110°F, then mix it into your flour, sugar, yeast, and salt and knead for 5 minutes until smooth (or simply skip to step 2 if using store-bought dough!).

  2. Place the dough in an oiled bowl, turning it to coat the surface, then cover it with a damp cloth and let it rise in a warm spot for about 2 hours until it is beautifully doubled in size.

  3. Preheat your oven to 450°F (or 425°F for convection), roll your dough into a 10-12 inch circle on a floured surface, and carefully pinch the ends and roll the sides inward to create your signature eye-shaped bread boat.

  4. Stir together the mozzarella, goat cheese, feta, and a splash of water until well-blended, then spread this rich cheese mixture evenly into the center of your dough boat.

  5. Bake for 15 minutes until the crust starts to brown, then brush the sides generously with melted butter and bake for 5 more minutes until the cheese is bubbly and the edges are perfectly crisp.

  6. Create a small well in the hot cheese to nestle the egg yolk and butter, then serve immediately, stirring the yolk into the cheese to create a luxurious, stretchy dip for your bread.
