Ingredients

Ingredients

  • lamb meat, cut into 1 1/2 inch cubes
  • olive oil, divided
  • paprika
  • ground cinnamon
  • kosher salt
  • garlic powder
  • ground coriander
  • ground cumin
  • ground cardamom
  • ground ginger
  • ground turmeric
  • cayenne pepper
  • ground cloves
  • 1 pinch saffron
  • 2 medium onions, cut into 1-inch cubes
  • 5 carrots, peeled, cut into fourths, then sliced lengthwise into thin strips
  • garlic, minced
  • freshly grated ginger
  • 1 lemon, zested
  • 1 (14.5 ounce) can homemade chicken broth or low-sodium canned broth
  • sun-dried tomato paste
  • honey
  • cornstarch (Optional)
  • water (Optional)

Directions

  1. In a large bowl, gently toss the lamb with 2 tablespoons of olive oil until every piece is evenly coated, then set it aside.

  2. Create your fragrant spice blend by mixing the paprika, cinnamon, salt, garlic powder, coriander, cumin, cardamom, ginger, turmeric, cayenne, cloves, and saffron in a large resealable bag; add the lamb and shake well to coat, then let it marinate in the fridge for at least 8 hours or overnight for the best flavor.

  3. Warm the remaining tablespoon of olive oil in a sturdy pot over medium-high heat and brown the lamb in three small batches for about 5 to 7 minutes each, transferring the beautifully seared meat to a plate as you go.

  4. Add the onions and carrots to the same pot and sauté for 5 minutes, then stir in the garlic and ginger and cook for another 5 minutes until everything is soft and aromatic.

  5. Return the lamb to the pot and stir in the lemon zest, chicken broth, tomato paste, and honey; bring it to a gentle boil, then lower the heat, cover, and simmer for 1 1/2 to 2 hours until the meat is melt-in-your-mouth tender.

  6. If you prefer a thicker sauce, simply stir in a quick cornstarch and water slurry during the final 5 minutes, then serve your beautiful tagine over a fluffy bed of couscous and enjoy!
