Ingredients

Ingredients

  • 2 1/2 c. all-purpose flour, spooned and leveled
  • 1/3 c. sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. fine salt
  • 1/2 c. (1 stick) cold unsalted butter, cut up
  • 1 c. heavy whipping cream, divided
  • 1 large egg, beaten
  • 1 c. confectioners' sugar
  • 2 tbsp. buttermilk
  • 1/2 tsp. pure vanilla extract
  • 1 tbsp. tangerine zest
  • 1/3 c. tangerine marmalade, plus 1/4 cup more
  • 1 tbsp. plus 1 teaspoon fresh rosemary, finely chopped
  • rosemary sprig, to garnish
  • 3 scallions, thinly sliced
  • 4 oz. crumbled feta (about 1 cup)
  • 2 tsp. cracked black pepper
  • 6 oz. blueberries
  • 1 tbsp. lemon zest
  • 2 tsp. lavender blossoms, finely crushed, plus more to garnish
  • 1/2 c. country ham
  • 4 oz. extra sharp cheddar (about 1 cup)
  • 1 jalapeño, minced, plus slices for garnish

Directions

  1. Start by preheating your oven to 425°F, then whisk together the flour, sugar, baking powder, and salt in a large bowl. Using a pastry blender or two forks, cut in the butter until the mixture looks like small, crumbly peas, then pop the bowl in the freezer for 14 to 16 minutes to ensure your scones are extra flaky. Once chilled, stir in the cream with a fork just until the dough is moistened, and gently knead it into a smooth ball right in the bowl.

  2. Carefully turn the dough out onto a parchment-lined baking sheet and pat it into a neat 8-inch circle about 1 inch thick. Cut the dough into 8 even wedges, pulling them about half an inch apart so they have room to rise, and finish them with a light brush of egg for a beautiful golden shine.

  3. Bake for 22 to 25 minutes, rotating the pan halfway through, until the scones are a lovely golden brown and firm in the center. Let them cool on a wire rack for 10 minutes before adding a delicious drizzle of Buttermilk Glaze.

  4. To make your simple Buttermilk Glaze, just whisk the confectioners' sugar, buttermilk, and vanilla extract together in a small bowl until it reaches a perfectly smooth consistency.

  5. For a bright Tangerine-Rosemary variation, skip the glaze and instead whisk tangerine zest, marmalade, and chopped rosemary into your cream; after baking, brush the warm scones with a quick melt of marmalade and rosemary and garnish with a fresh sprig.

  6. To enjoy savory Scallion and Feta scones, reduce the sugar to 2 tablespoons and skip the glaze, simply tossing fresh scallions, crumbled feta, and cracked black pepper into your flour mixture before adding the cream.

  7. For fragrant Blueberry Lavender scones, toss fresh blueberries, lemon zest, and crushed lavender blossoms into your dry ingredients, then sprinkle a few extra blossoms over the glaze for a stunning presentation.

  8. To create a bold Ham, Jalapeño, and Cheddar treat, reduce the sugar to 2 tablespoons and mix the ham, sharp cheese, and diced peppers into the flour, then top each wedge with a fresh jalapeño slice before baking for a bit of extra heat.
