Carrot cookies turn out soft, fragrant, and slightly moist inside – somewhat resembling carrot cake, but in cookie form.
🍪 Ingredients (for 15–18 pcs.)
Carrots - 150 g (1-2 medium, grated on a fine grater)
Butter - 100 g (soft)
Sugar - 120 g
Egg - 1 pc.
Flour - 200 g
Baking powder - 1 tsp.
Salt - a pinch
Cinnamon - ½ tsp (optional)
Vanilla sugar - 1 tsp.
Raisins or nuts - 50 g (to taste)
🔪 Preparation
Beat the butter with sugar until fluffy.
Add egg, vanilla sugar, stir.
Stir in the grated carrot.
Mix flour, baking powder, salt, and cinnamon into the carrot mixture.
If desired, add raisins or chopped nuts.
Spoon the dough onto a baking sheet lined with parchment paper (leaving space between portions).
Bake at 180 °C for about 15–18 minutes until the edges are golden brown.
Cool on a wire rack.
📌 Tips:
You can sprinkle with powdered sugar on top or make a cream cheese frosting (like for carrot cake).
For a more dietary option, part of the flour is replaced with oatmeal.
